Trouble finding a Cook

Description:Terricke’s difficulties appointing a cook continued. In a further letter sent to Sir Richard dated 8th December 1660 he had identified a possible candidate for the post, yet Terricke had been unable to ‘sett eye one him’. Terricke writes that he had enquired ‘more stricktly after him of the best of the Citty Cooks’ who informed him that the man was ‘a very admirable cooke; but hath a faculty nott to staye longe in A place’.

Terricke had identified ‘seuerall younge men’ in place of the man he had chosen, but wasn’t sure that they would be suitable. Terricke writes ‘in truth I haue small hopes to fitt you for youre servise att Christmasse’, adding that ‘the Court & the Nobility’ had taken up ‘all the choise workemen’. He promises Sir Richard to ‘leave order with a frinde’ who would ‘finde’ Sir Richard ‘an honest man’ that was ‘a good workeman’ who was ‘about 30 yeares of age or upwards’.

Terricke’s letter also informs Sir Richard that he had ‘meette with a good piece of Canary’ and had sent him ‘ten gallands’. He adds ‘if it please youre pallet there is morre of itt to bee had’. The ‘Canary Fleette’ had not yet arrived, with ‘only one shipe arrived in the Downes’. Terricke informs Sir Richard that he would therefore have to wait for his ‘Read Canary’ wine.
